Why does a person experience hypoglycemic episodes after the laparoscopic removal of acute perforated appendicitis?

Hi doctor,

I am a 56 year old female who starting having hypoglycemic episodes after the laparoscopy removal of an acute perforated appendicitis. I was treated with heavy doses of antibiotics and had to wait six weeks before the inflammation went down to get my appendix removed. I recently consulted an endocrinologist, who determined that my amylase and c-peptide levels are elevated. My amalyse was 192 following the two glucose tolerance tests, the c peptide was low at 1.0, then increased on the second test at 10.2, but my glucose was normal.

I have been referred to gastroenterology to investigate if there might have been a surgical issue but have not met with them. In the meantime, I am monitoring my glucose levels and have cut back on exercise and sticking to my whole food plant based diet. Please advise.

Your high amylase and c peptide levels are due to perforated appendix, since your glucose levels are normal. However, I would like to ask few queries for better understanding of illness

What is your hemoglobin A1C levels?
How is your appetite and is there any weight loss?
Was your hypoglycemia documented?
Did you have any electrolyte changes?
