Autolysis is the cellular self-digestion of cells by the action of endogenous or internal cellular enzymes. It mainly occurs in dying or dead cells. Autolysis produces an acidic, anaerobic, nutrient-rich environment that nurtures the activity of invasive and opportunistic microorganisms. Certain conditions like temperature and concentration of enzymes can increase or decrease the speed of autolysis.
